Pineapple Chicken & Veggie Skewers


I always love a good chicken and veg combo, especially in barbecue season! This one's a big favourite in our household, and it's as easy as 1 2 3. I often find that when I'm looking up new recipes for easy grilling ideas I come up with a lot of recipes that call for making your own sauce, and having to wait hours for things when it really could be a lot easier than that. 

This recipe is for anyone who doesn't like to go completely scratch but is looking for something a little different and fun. You don't need much, just some veggies, chicken and pineapple sauce! The options to your veggie selections are endless, but today I'll just show you what we used for our last barbecue.


Pineapple Chicken & Veggie Skewers
Makes 8-12 large skewers

♥ 2 Skinless Boneless Chicken Breasts
♥ 2-3 Bell Peppers
♥ 1 cup Fresh Pineapple Chunks
♥ 1 pkg Whole White Mushrooms
♥ 1 Zucchini
♥ 1 pint Cherry Tomatoes
♥ 1 Red Onion
♥ 1 jar of VH Pineapple Sauce
♥ 1/2 lime
♥ Cracked Black Pepper

Clean and chop your chicken into large cubes and set aside. Wash your hands before you work with your veggies. Clean your veggies, there's no need to peel your zucchini, unless you prefer it that way. Chop everything into large chunks, accept for your tomatoes and pineapple. For the red onion I usually cut into 8 large pieces and just seperate the layers, leaving 2-3 pieces together for each "piece" of onion. Tip: If you want less skewers, just use your best judgement and only cube the amount of veggies that you need. Cut this recipe in half and it will make 6 good skewers.

Add all your cubed veggies into a large bowl and pour about 1/3 of the jar of Pineapple sauce. Add another 1/3 of the jar to your chicken. Squeeze the half a lime into each of the bowls evenly. Add a pinch of cracked black pepper and stir until well coated.

String your veggies and chicken onto skewers, mixing the veggies up for variety. At this point you can either cook on the barbecue for 20 minutes to give them a nice smokey and char flavour, or you can choose not to put them on skewers and simply cook as a stir fry. We did both of these options this weekend and I must say both are quite delicious, but you do get more pineapple flavour as a stir fry. Either way, once it's fully cooked (check your chicken if using the grill! just incase), serve over a bed of rice and drizzle the remainder of the Pineapple Sauce on top. Enjoy!
