BREAKING BAD FINALE // "BLUE METH" RECIPE

Hey guys, so I know it's only a few short hours until the series finale of Breaking Bad. The moment we've all been waiting for. I'm sure everyone has their own little viewing parties already arranged and ready to go. But, I really wanted to share what we're doing for our finale party. It's pretty simple and you can make it with things you have at home in less than 20 minutes.

It's "blue meth"! Well, actually, it's blue rock candy - but we can pretend right? 

I found this recipe on Sugar Hero and it's extremely simple to make. Here's what you need:
  • 1/2 cup water
  • 3/4 cup light corn syrup 
  • 2 cups granulated white sugar
  • 2 tsp clear flavouring extract (preferably fruit, we used lemon)
  • 1 drop sky blue food colouring gel (I used Wilton Sky Blue) 
  • Candy thermometer 
  • Pastry brush


I'm going to post the directions pretty much exactly as Elizabeth describes because it can be tricky to do this even though it is a pretty simple recipe and I want everyone's to turn out as good as mine did!
  • Line a baking sheet with foil and spray the foil with nonstick cooking spray. I didn't have spray so I lightly buttered the foil, not even enough to leave a mark as to not get a buttery flavor on my candy.
  • Combine the water, corn syrup, and granulated sugar in a medium sauce pan on medium-high heat. This recipe calls for light corn syrup but I went out and got Lily White Corn Syrup just to be sure it would turn a perfect blue colour. 
  • Stir ingredients until it starts to boil and ONLY until it boils. Brush the sides with a wet pastry brush and then add the thermometer.
  • This step is very important - Continue to cook the candy without stirring until it reads 290-295 degrees Fahrenheit (143-146 C) on the thermometer. Watch the temperature carefully–a lower temperature might produce sticky candy, while a higher temperature runs the risk of producing green candy! Once at 285, take the pan off the heat and let it sit for a few moments, until bubbles stop breaking on the surface. Add the flavoring and a drop of food coloring, and stir everything together.
  • Pour the candy onto the prepared baking sheet and tilt it so that it runs into a thin layer. Let it set completely at room temperature.

Once set, break it into small pieces with the end of a spatula, wooden spoon or with your hand. Put in small baggies and pass out to your viewing party buddies! Store in an airtight container at room temperature. 

P.S It took me four tries to get this right, so don't feel discouraged! The first and second time it wasn't cooked long enough because I don't have a proper candy thermometer. The third time I over cooked it by seconds and it turned green (Still yummy though!) and the fourth time was perfect. Trial and error, folks!
