It's officially rhubarb season, who's excited? This girl!
Rhubarb has to be one of my favourite foods ever. I love it in fruit salad, pies, crisps, jello, I even love it raw. The best way to have it though, is definitely with strawberries. They're made for each other. It's the perfect combination of sweet and tart. I've had rhubarb all the different ways, but, I had never made it as a drink before so I thought I'd try it out. I know how to infuse fruit or teabags for concentrate teas from working at numerous cafes growing up, so it was easy for me to whip up a recipe for Strawberry Rhubarb Iced Tea lickity split.
Also a fan of rhubarb, this iced tea was a giant hit with my Mom. We've already decided to ask around for wild rhubarb from everybody's back yard, because it grows like crazy here. We'll for sure be brewing this beverage all summer long!
Strawberry Rhubarb Iced Tea
Serves 8
♥ 2 cups (6-8 stalks) of fresh or frozen rhubarb, cut into 1 inch pieces
♥ 2 cups fresh strawberries, chopped
♥ 8 cups water
♥ 1/2 cup white sugar
♥ Mint leaves or a fresh strawberry, for garnish
♥ Clean your fruit, chop the rhubarb, hull and chop your strawberries. In a large pot, combine the fruit with the water and bring to a boil. Simmer for one hour.
♥ Strain the liquid with a fine mesh sieve into a jug or bowl. Discard the fruit or save for jam. Add sugar to liquid and stir until dissolved. Let cool completely, then pour over ice, garnish with mint sprigs or a fresh strawberry and enjoy!
Wow, this sounds amazing! I had no idea you could make tea like this!! If you can't do sugar, can you do agave nectar to sweeten it instead??
