Cake In A Jar

It's no secret I love to bake, even more so I love to bake cake in every form. So, of course, I absolutely adore this new way of making cake - in jars! I attempted this once before by actually baking the batter in the jars, but it didn't quite work out how I would've liked it to. The second time around I baked the cake outside of the jars and assembled them separately. They aren't the prettiest cake jars I've ever seen, but it's definitely something fun and different you can do for a birthday or shower. 
Cake In A Jar
White cake mix
3 egg whites
1/3 cup vegetable oil
1 1/4 cup water or milk
Gel paste food colouring
For Icing:
1 cup butter, softened
1/3 cup cream cheese
1-2 cups icing sugar
1 tsp vanilla

♥ Preheat oven to 350 degrees F and grease three 9" round cake pans.

♥ In your stand up mixer (or in a large bowl with a hand mixer), combine white cake mix with egg whites, oil and water on low speed for 30 seconds and then on medium speed for 2 minutes. Split batter into 3 bowls and add gel paste food colouring. The colours are your choice! These cakes were to celebrate the coming of Autumn so I used Wilton gel paste in No Taste Red for the bottom, Copper for the middle and a light mix of Brown and Copper for the top. (If you want to do the rainbow, bake two boxes of cake mix together and double the icing.)

♥ Pour coloured cake batter into cake pans and smooth it out so it's even. Bake for 25 minutes. Once done baking, remove from cake pans immediately by flipping upside down onto plates. Let cool completely.

♥ Cream butter and cream cheese with your stand up mixer until light and fluffy. Add vanilla and mix until just combined. Add one cup of icing sugar and taste. Add another cup if you prefer a thicker icing. Fill a large icing bag with any tip or no tip. Set aside.

♥ With a circular cookie cutter the same size as a baby food jar, cut circles of cake. You can also use a knife and trace around the baby food jar. Thread the bottom colour, in the case red, with a toothpick and carefully place on the bottom of the baby food jar, packing the cake down with a spoon helps make the cakes look better. Add a dollop of icing and then repeat with the middle colour, and again with the top colour, packing down all the cake before you do a layer of icing. Add a little extra icing to the top and add quins or sprinkles for fun. I used gingerbread man quins because they're cute! 

Keep refrigerated until serving, and enjoy! xo
