Pineapple Mango Cocktail


You probably have better luck at stumbling across a unicorn than seeing me drunk. But, the past month or so I've been creating new drinks and having the occasional cocktail or beer by the fire at night. I've gone out twice to the bar which is rare. What normal adults do regularly, I find is extremely out of my norm. But this is my summer for fun and if I want to create fun fruity drinks than why not? 

We're planning a Luau for the end of June so I've been trying to come up with some Hawaiian inspired cocktails to share. Jesse bought me a pineapple weeks ago that was greener than a pine tree and it finally ripened up around the same day my aunt gave me a perfectly ripe mango, my favourite! (She just gets me, you know?) So I whipped this contraption up and what d'ya know, it's actually delicious!


Pineapple Mango Cocktail
♥ 1 ripe pineapple
♥ 1 ripe mango
♥ 4 oz. golden rum
♥ 2 cups ice

Trim and core your pineapple. Save about 1/5 of it for garnishing, chop the rest into small cubes. Peel, core and cube your mango. Here is a good tutorial for those who are like me and can't cut a mango to save their life. You're welcome.

Combine fruit cubes and rum in blender and blend until smooth. Add ice a bit at a time and keep blending until you've used all the ice and have come to a smoothie like consistency. Garnish with your pineapple (or starfruit) and enjoy! Keep refrigerated. Serves 5-6.
